Gobble up a bit of trivia

The focal point of many family dinners on Thursday, of course, will be turkey.

The bird is a traditional food to celebrate the Thanksgiving holiday.

Some of these turkeys are bought frozen at stores while others are fresh, so fresh in fact that some in the past few days have been walking around Jones Turkey Farm in Jefferson Township.

Owner Dave Jones was busy Tuesday, but he did relay some facts about his turkeys.

Both males and females are eaten.

"They taste the same, just the males are bigger," Jones said.

On average, a turkey eats about 3 pounds of feed a day.

"It's about 99 percent corn and 1 percent soy beans. We grow everything right here on the farm," Jones said.

Most turkeys are about 8 months old when it comes time to butcher them, but Jones said he has multiple flocks so turkeys are available year round.

Many families have their own techniques for cooking the big bird. Some cook it breast side up while others flip the breast down.

Lu Ann Stillwagon, culinary arts instructor at the Butler County Vocational-Technical School, said she prefers the breast side up method.

She covers the top of the turkey with butter, and puts orange slices, seasoning and celery around the turkey. She puts several bay leaves inside the turkey cavity, but warns to never put stuffing inside. She places the turkey in a roaster on a rack and covers the turkey with foil.

The turkey should be cooked to 180 degrees, she said. Any reheating should be done to 165 degrees.
