Sausage with Beer

2 teaspoons olive oil

2 sweet onions, peeled and sliced into rings

2 of your favorite sausages such as bratwurst, knockwurst, or Italian sausage

1 to 2 bottles of beer

Sausages can be browned in a large skillet or grilled over a gas or charcoal grill.

If browning sausages in a skillet, remove when done and set them aside. You can use the same skillet to finish the recipe. Add the olive oil and the onions to the skillet over medium high heat. Cook the onions, stirring constantly, until caramelized and golden in color. NOTE: if you want to speed up the process, you can add 2 teaspoons of sugar, and this will caramelize the onions more easily.

Add the beer, turn the heat to high, and reduce the beer over high heat until the syrupy consistency, approximately 10 to 15 minutes.

Add the sausages, reduce heat to low, and stir to coat and warm the sausages through. Serve immediately or keep warm.

Serves 6.
