Saffron Rice

Fish is one of the original fast foods. Any white-fleshed fish such as cod or haddock can be used in this recipe, mahi mahi is used here, along with instant brown rice to keep the prep time at a minimum. (MCT)

2 teaspoons olive oil½ cup long-grain white rice1/8, teaspoon saffronSalt and freshly ground pepper¼ cup chopped fresh parsley (optional)Heat olive oil in a medium-size nonstick skillet over medium heat. Add rice and toss 1 minute. Add 1 cup water and saffron. Bring to a simmer and cover. Simmer gently for 15 minutes. Add salt and pepper to taste. Sprinkle parsley on top.
