Lemon-Flavored Halibut
2 teaspoons lemon zest
1 tablespoon lemon juice
1 tablespoon olive oil, divided use
3/4 pound halibut
2 tablespoons capers, drained
Salt and freshly ground black pepper
2 slices Whole wheat baguette
Mix lemon zest, lemon juice and 1/2 tablespoon olive oil in a small bowl and set aside. Heat remaining 1/2 tablespoon oil in a nonstick skillet over medium-high heat and add halibut. Saute 4 minutes, Turn over and saute 4 minute for 3/4-inch fillet. A meat thermometer should read 145 degrees. Remove fish from skillet. Spoon lemon mixture over fish and sprinkle capers on top. Serve bread on the side.
