Pineapple Rice
1 package microwaveable brown rice to make 1 1/2-cups cooked
1/2 cup 1/2-inch fresh pineapple cubes
1/2 cup sliced sweet pimento
1 teaspoon olive oil
Salt and freshly ground black pepper
Microwave brown rice according to package instructions. Measure 1 1/2 cups and save any extra for another meal. Add pineapple cubes, pimento, oil and salt and pepper to taste. Toss well.
Yield 2 servings.
Per serving: 238 calories (15% from fat), 3.9 g fat (0.7 g saturated, 1.7 g monounsaturated), no cholesterol, 4.9 g protein, 46.6 g carbohydrates, 3.9 g fiber, 13 mg sodium.
