Butler County Tomatoes & Shallots

The Butler Memorial Hospital Cafe includes local produce in its daily specials. Recently the menu included bacon wrapped chicken with tomato and shallots and mashed potatoes.

5 shallots10 tomatoes¾ cup extra virgin olive oil¾ cup red wine vinegar½ cup raw sugarBlanch raw tomatoes in boiling water for 3 minutes. Cool quickly in ice water. Peel tomato skin and discard. Chop tomatoes 1 inch by 1 inch.Combine oil, vinegar and sugar and whisk in a mixing bowl.Add the tomatoes and shallots. Season with salt and pepper to taste.Allow tomatoes to marinate for 4 to 6 hours before serving.Serve chilled or at room temperature.
