Tomato-Cucumber Salsa
1 pound tomatoes, chopped½ large cucumber, peeled and chopped½ cup chopped red onion1 cup parsley, chopped1 tablespoon extra-virgin olive oil½ teaspoon salt (or to taste)Combine all ingredients in a bowl and let sit 10 to 15 minutes before serving.Serve over rice, mild fish such as flounder, or with seasoned grilled chicken breasts.
