Spinach Salad with a Crunch

Of course spinach is good for you, remember Popeye?

Well, I don't recommend eating it through your pipe, or eating it out a can, for that matter. And I can't guarantee it will give you bulging muscles and superior strength.

Spinach does contain a powerful nutrient combination that makes it extremely healthy to eat. Only carrots and parsley are higher in beta carotene. Your body changes beta carotene into vitamin A as you need it. It is also a good source of 9 other vitamins which are, in most cases, bioavailable in spinach. Spinach is nature's number 1 source of Alpha Lipoic Acid, a potent antioxidant and cancer fighter. To put it lightly, if you eat your spinach you will be "strong to the finish."

1 large bowl of spinach leaves and/or spring mix2 Granny Smith apples, cut into small chunks¼ cup of olive oil2 cups roasted chicken breast, cubed½ cup Blue cheese, crumbled¾ cup of toasted walnutsDressing:1 garlic clove, crushedSalt and ground pepper1 teaspoon of balsamic vinegar2 teaspoons white vinegarOlive oilCombine salad greens and apples in a large bowl. Toss with the olive oil.In a separate bowl, mix the garlic, salt and pepper and the vinegars together. Add about 1 tsp. of olive oil and whisk it together. Set aside.Place the walnuts, chicken and blue cheese on top. Add the rest of the salad dressing before serving then toss and serve.Cook's Notes: Use your favorite dark greens and experiment with different greens to bring out different flavors.
