Goat cheese and sun-dried tomato crostini
12 slices French bread, cut C\v-inch thick
3 tablespoons olive oil
4 ounces goat cheese, room temperature
2 tablespoons finely chopped sun-dried tomatoes, packed in oil
2 tablespoons chopped fresh basil
Z\v teaspoon salt
Z\v teaspoon black pepper
Basil leaves, for garnish
Sun-dried tomatoes, for garnish
Lightly brush both sides of bread with olive oil. Place on baking sheet and broil 8 minutes or until golden. Remove from oven.
Meanwhile, in medium bowl, blend goat cheese, sun-dried tomatoes, chopped basil, salt and pepper until smooth and uniformly combined. (The mixture will become pink.) Spread goat cheese mixture evenly over crostini. Broil 7 minutes or until bubbly.
Remove to serving tray. Garnish with basil leaves and additional sun-dried tomatoes.
Makes 6 servings.
