Harrisville VFC offers cookbook

HARRISVILLE — The “Turn up the Heat” Harrisville community cookbook is now available at several Harrisville locations.

Composed by the Harrisville Volunteer Fire Company, the cookbook contains 165 recipes and 40 pages of household tips.

Cookbooks will be sold for $8 each and are available by contacting a fire department member, or at Forestville Beer Distributor, Frampton’s Auto Body, Hughes Penn Gold Ice Cream, Lisa’s Family Hair Styling, Turner Insurance Agency and Willies Smokehouse.

The following are a few recipes featured in the cookbook.

1 package scalloped potatoes1 can tomatoes1½ cups water¼ teaspoon oregano1 4-oz. package sliced pepperoni1 4-oz. package shredded mozzarella cheeseHeat oven to 400 degrees. Empty potato slices and packet of seasoned sauce mix into ungreased 2-quart casserole dish.Heat tomatoes, water and oregano to boiling; stir in potatoes. Arrange pepperoni on top and sprinkle with cheese. Bake, uncovered for 30 to 35 minutes.Variation: Substitute ½ pound hamburger or sausage for pepperoni.Submitted by Dolly Eaton

1 quart berries or any kind of fruit½ cup honey or sugar1 tablespoon butter1 cup flour½ teaspoon salt2 teaspoons baking powder4 tablespoons sugar2 tablespoons butter, melted½ cup milkPlace fruit, mixed with ½ cup sugar or honey in bottom of baking dish. Dot with 1 tablespoon butter.Combine dry ingredients. Add milk and melted butter to make a batter. Pour batter over fruit. Bake at 350 degrees for at least ½ hour, depending on the kind of fruit.Submitted by Jane Uber
