Tomato soup is versatile treat for entire family

Americans love a good bowl of soup

Try one of these three zesty combinations, or create your own, for a fun and festive family soup night:

Tomato Soup: Try a tempting combination of shredded cheese, sour cream, green onions and bacon bits.Archeological discoveries suggest the consumption of soup dates back more than 5,000 years. Throughout the ages, soup has remained a relished comfort food and is a part of the culinary history of almost every culture.Today, it is estimated that two million gallons of soup are ladled per hour and that Americans consume more than 12 billion bowls of soup each year.For generations of Americans, a lunch of tomato soup and a grilled cheese sandwich represents the ultimate comfort food.In fact, tomato soup continues to be ranked one of six top-selling dry grocery items in supermarkets nationwide.In addition to eating it as a lunch entrée, cooking with tomato soup is an easy way to create delicious, family-friendly recipes in a few simple steps:

1 box (about 18 ounces) spice cake mix1 can (10 3/4 ounces) tomato soup1/2 cup water2 eggsCream cheese frostingPreheat oven to 350° degrees. Grease and lightly flour two 8-inch or 9-inch round cake pans.Mix cake mix, soup, water and eggs according to package directions. Pour into prepared pans.Bake 25 minutes or until done.Cool on wire racks 10 minutes. Remove from pans and cool completely.Fill and frost with cream cheese frosting.Serves 12.

2 packages (3 ounces each) cream cheese (softened)1 package (1 pound) sifted confectioners' sugar1/2 teaspoon vanilla extractMilk (optional)Beat cream cheese until smooth. Gradually blend in sifted confectioners' sugar and vanilla extract. If desired, thin with milk.

1 pound ground beef1 can (10 3/4 ounces) tomato soup1 cup salso1/2 cup shredded cheddar cheese8 sandwich rollsCook beef in skillet until browned. Pour off fat.Add soup and salsa. Heat through. Top with cheese. Serve on rollsServes 8.
