Butler Penne set to open

Menu features 3 pastas, 2 rotating

A new fast-casual pasta restaurant is set to open this week at 201 S. Main in Butler.

The man behind Butler’s The Chop Shop, Bill Atkinson, plans to serve noodles two blocks down the street from his first offering.

The restaurant takes its name from an old method of abbreviating Pennsylvania, Atkinson said: Butler, Penna., is soon to be home to Butler Penne.

He will serve three varieties of pasta a day: a cheaper, dry penne mainstay and two rotating, fresh pasta options, such as fettuccine and ravioli. Salads, paninis and soups will also be sold, but no alcohol yet.

Pasta will be cooked in carbon steel pans atop 10 induction burners, all on a bar in front of customers. It’s all devised to turn out dishes within a few minutes, Atkinson said.

He described the process as “like Subway, but with pasta.”

Inside, Atkinson tried to replicate the blend of 1950s and 1970s decor in his grandparents’ home.

Butler Penne plans to open midweek, with an exact date still pending an announcement.
