Busy families can still enjoy healthy meals

A turkey tomato Florentine burger is a quick food item to prepare for dinner while still being nutritious. Using whole-wheat buns also is very beneficial.

Parents who are stretched for time run the risk of serving meals that are not nutritionally well-balanced. In fact, according to the journal Topics in Clinical Nutrition, more than one-third of Americans wait until the last minute to plan their dinner, which can result in poor nutrition picks for the family.

To avoid relying on quick but unhealthy dinner foods, make sure the pantry and refrigerator are both stocked with nutritious foods that fit an on-the-go lifestyle.

Including whole grains at mealtime is important for all family members. According to registered dietitian Emily Korns, "The Dietary Guidelines recommend eating three or more ounce-equivalents of whole grain foods daily — that's 48 grams or more of whole grains. Diets that meet this level of whole grains are associated with reduced risk of several chronic diseases and may help with weight maintenance."

1 6-ounce package long grain and wild rice with spinach and sun-dried tomatoes1½ cups water1 5.5 ounce can of low-sodium tomato juice (about X\c cups)1 pound ground turkey¼ cup fresh parsley, chopped½ teaspoon onion powder½ teaspoon garlic powder8 hamburger buns2 cups baby spinach2 tomatoes, slicedCombine rice, contents of seasoning packet, 1½ cups water and tomato juice into a medium saucepan. Stir well. Bring contents to a boil. Reduce heat and simmer covered 25 minutes or until water is absorbed.While the rice is cooking, combine the turkey, parsley and spices in a large mixing bowl.Once the rice is cooked, allow it to cool by spreading out the rice on a large baking sheet for about 5 minutes.Scoop the rice into the turkey mixture mixing bowl and combine well with your hands. Form the mixture into 8 burgers. Spray the burgers with cooking spray and heat over a medium grill or broil for about 4 minutes on each side.Serve on your favorite toasted bun with baby spinach leaves and a slice of tomato, or try just serving the burger over a bed of baby spinach leaves.
