Spinach and Beet Salad
4 cups baby spinach
1/2 cup cooked beets, cut into 2-inch pieces
4 tablespoons reduced-fat vinaigrette dressing
1/4 cup walnut halves
Place spinach and beets in a salad bowl and add the dressing. Toss well. Add walnut halves.
Yield 2 servings.
