Early American cooking instructor Stan Malecki said a wood fire, outdoor bake oven is under construction at the Old Stone House. Summer cooking classes at the site will use the new oven this summer.

The Old Stone House is located at the intersection of Routes 8, 173 and 528, about 12 miles north of Butler.

“When I'm in Florida, every Thursday I work at a state park,” said Stan Malecki of Evans City. “I make pinto beans, molasses cornbread and apple crisp.”Of all of the recipes, Malecki says these three are the most popular.Yield: about 8 cups2 cans, 27 ounces each, pinto beans6 ounces (4 slices) thick-sliced bacon, diced into 1-inch pieces1 medium onion, finely diced1 medium green pepper, finely dicedSauté the bacon, onion and pepper in a heated 8-inch Dutch oven until the bacon is slightly brown and the onion and pepper are soft.Add the beans with the liquid from the can. If more liquid is needed, add chicken stock.Simmer over the fire for one and a half to two hours.Source: Stan Malecki of Evans City. Stan Malecki often uses apple pie filling when he makes this outdoors in Florida or at the Old Stone House in Brady Township. He said that other fruit fillings are good too.To judge the temperature of the Dutch oven, put an oven thermometer in the Dutch oven before heating it. Remove the thermometer before putting ingredients into the Dutch oven.1 box yellow cake mix1 cold stick butter (½ cup), cut into cubes2 cans fruit pie filling1¼ cup chopped or finely diced walnutsHeat a 12-inch cast iron Dutch oven to 375 degrees. Remove the oven from the heat source before adding the ingredients.Lightly grease the Dutch oven with cooking spray.Add fruit pie filling to the bottom of the Dutch oven.In a bowl, cut the cold butter into the cake mix and add the nuts.Spread the dry cake mixture over the top of the fruit filling.Bake in a tightly covered Dutch oven for 30 minutes.Source: Stan Malecki of Evans City.
