Prospect requires traps for grease
Restaurants in Prospect borough will need to start trapping their grease.
Borough council unanimously approved an ordinance that mandates that property owners who produce grease need to use grease traps, according to Andrew Menchyk, borough solicitor.
“Principally it pertains to restaurant-type entities,” Menchyk said. “There have been issues with grease accumulation in the borough's conveyance system.”
A grease trap is a device used on kitchen wastewater flows to collect the grease floating at the top of the water before it enters the sewer waste system.
Menchyk said the excess grease has caused blockages and other damages to the borough's system. He said the ordinance is effective immediately, and property owners are responsible for buying and installing their own traps.
The Butler Fairgrounds in Prospect sees hundreds of vendors, many who make and sell food, each year at its events.
Larry Hays, concessions manager for the fairgrounds, said they take care of grease collection for their vendors.
“That shouldn't affect any of our vendors,” Hays said. “We put barrels out for them, and they can dump it in there and somebody comes by and picks it up.”
There are at least three other restaurants in the Prospect area.
