POTATO CHIP COOKIES
4 sticks of unsalted butter (room temperature)
1 1/2 cups granulated sugar
2 teaspoons vanilla
3 1/2 cups all-purpose flour
2 cups crushed potato chips
Powdered sugar to sprinkle on after baking (optional)
Cream together the butter, granulated sugar and add vanilla. Gradually add flour. Add crushed potato chips.
Drop by spoon onto parchment paper-covered cookie sheets. Flatten slightly with fork.
Bake in preheated 350 degree oven 12-14 minutes — until edges just begin to slightly brown. Cool on rack.
When cool, sprinkle with powdered sugar, if desired.
Makes approximately 80-90 cookies.
