Gum Drop Christmas Cookies

2/3 cup shortening

1 teaspoon soda

1 cup white sugar

1 cup flour

1 cup brown sugar

1 teaspoon salt

1 teaspoon vanilla

2 teaspoon baking powder

2 eggs

1 cup rolled oats

1 cup coconut

1½-2 cups of cut up gum drops (I use red and green ones for Christmas if I can find them)

Cream shortening and sugars together. Add vanilla and eggs. Blend well.

Sift flour, baking powder, soda and salt. Stir into other mixture. Add oats, coconut and gum drops and blend well.

Drop on greased (or parchment covered) cookie sheet, a spoonful at a time.

Bake in preheated 325 degree oven for 15- 20 minutes until golden brown.

This cookie is hard and crunchy. It is perfect with milk, coffee, tea or hot chocolate.

This is my family’s favorite cookie!
