CRANBERRY TWP — A Seneca Valley High School student is using his senior project to help people who have Celiac disease.
Jorge Olan will have a free informational session about living with the disease at noon Feb. 6 in the township municipal center, 2525 Rochester Road.
Celiac disease is an autoimmune disease where the ingestion of gluten, a protein found in wheat, rye and barley, causes damage in the small intestine, according to the Celiac Disease Foundation.
People who must live with a gluten-free diet not only have to be careful about what they eat at home, but also at restaurants, Jorge said.
He said he was diagnosed with the condition two years ago, but had been living with it for several years already.
As a part of his project, Jorge also has written and put together a gluten-free cookbook.
