Chicken in a hole
Whole chicken, cleaned
Chicken spices
Garlic cloves
Onion, sliced
Cabbage leaves (optional)
Cheesecloth (optional)
Heavy duty aluminum foil
At home: Wipe chicken dry. Push cloves of garlic between skin and flesh of chicken. Place sliced onion in chicken cavity. Sprinkle chicken with spices inside and outside.Wrap cabbage leaves around the chicken to prevent burning or wrap cheesecloth around chicken for easy removal of skin. Either will help to prevent burning.Wrap two to three layers of aluminum foil around the chicken and freeze for later use at campsite.
At camp: Place chicken out to thaw. Prepare a cooking hole by digging a hole about a yard deep and 1½ feet square (for one chicken.) To make more than one chicken, dig hole proportionally larger.Line walls of hole with wood. Place hot coals in the bottom of the hole or build a fire in the hole. The wood walls should burn down to coals, leaving hot walls and a pile of hot coals at the bottoms. Sprinkle dry sand lightly over the coals.Place the chicken in the hole, sprinkle dry sand and hot coals around the chicken.Cover the chicken with a light layer of dry sand. Place more hot coals on the top of the chicken followed by more sand. Fill in the hole and place a marker on top.Let cook for 3 to 4 hours, then dig up and serve.
